This recipe is one of Seth’s favorites and so easy. In fact, I also have gotten my sister, brother and mom loving it too. I got it from some Quick Cooking magazine a while ago.
Sweet N Spicy Chicken
1 lb boneless skinless chicken breasts, cut into 1/2 in cubes
3 T taco seasoning
1-2 t vegetable oil
1 jar (11 oz) chunky salsa
1/2 c preach preserves
Hot cooked rice
1. Place the chicken into a large resealable plastic bag, add taco seasoning and toss to coat. Brown chicken in a skillet in oil.
2. Combine salsa and preserves; stir into skillet. Bring to a boil. Reduce heat; sover and simmer for 2-3 minutes or until meat juices run clear. Serve over rice.
