Fudge June 20, 2010

I’ve tried different fudge recipes, but this one has been my favorite.  It’s pretty easy and quick, too.  I think I found it in a small nestle cookbook.

Toll House Famous Fudge

1 1/2 c Sugar

2/3 c (5 oz can) Evaporated milk

2 T Butter

1/2 t Salt

2 c Mini marshmallows

1 1/2 c (9 oz) Semi-sweet chocolate chips

1 t vanilla extract

1/2 c Chopped pecans or walnuts (optional)

1. Line 8 inch baking pan with foil.

2. Combine sugar, evaporated milk, butter, and salt in medium, heavy-duty saucepan.  Bring to a full rolling boil over medium heat, stirring constantly, for 4-5 minutes.  Remove from heat.

3. Stir in marshmallows, chocolate chips, nuts and vanilla extract.  Stir vigorously for 1 min or until marshmallows are melted.  Pour into prepared baking pan; refrigerate for 2 hours or until firm. Lift from pan; remove foil.  Cut into pieces  Makes 49 pieces.

Optional: to make Peanut Butter Chocolate Fudge– substitute the chocolate chips for a mix of peanut butter and milk chocolate chips and 1/2 c chopped peanuts.
