This has seriously got to be the easiest thing I have made. Well, at least the easiest actual meal (if you don’t count meals out of a box or can!). I got it from a Campbell’s advertisement in a magazine sometime ago. You can customize it to however your family will like it best (see the bottom of the recipe for the different ideas). I just made it the regular way with peas, corn and broccoli.
Cheesy Chicken & Rice Casserole
1 can (10.75 oz) cream of chicken soup
1 1/3 c water
3/4 c uncooked rice
2 c fresh or frozen veggies
1/2 t onion powder
4 skinless, boneless chicken breast halves
1/2 c shredded cheddar cheese
1. Stir the soup, water, rice, veggies and onion powder in a 12X8 shallow baking dish.
2. Top with chicken. Season chicken as desired. Cover.
3. Bake at 375 for 45 min or until done. Top with cheese. Makes 4 servings. (Mine took 15 minutes or more to actually cook all the way through. I may have just had thicker pieces of chicken, but expect a little longer cooking time.)
Mexican Fiesta: In place of onion powder, use 1 tsp chili powder. Substitute Mexican cheese blend for cheddar.
Taste of Italy: In place of onion powder, use 1 tsp Italian seasoning. Substitute 1/3 c shredded parmesan for cheddar.
