I got this recipe out of the Kraft Food & Family magazine from Summer 06. It turned out pretty good, but for some reason the marshmallows didn’t “puff” or melt enough to stick it all together. So I ended up baking it at 350 for about 10 min or so…until the marshmallows had melted more and it could be packed down better. But it was still very yummy! Warning…its pretty gooey and messy! But oh so worth it!
I omitted the peanuts because one of the girls in our D-Group is allergic. I used ALDI brand cereal and regular semisweet baking chips instead of the Baker’s chocolate squares.
Rocky Road Crunch Bars
1/3 c Honey
2 T Butter
4 C Miniature marshmallows
6 C Honey Bunches of Oats cereal
1 C Peanuts, chopped
4 Squares Baker’s Semi-Sweet Baking chocolate, chopped
1. Microwave honey and butter in large bowl on high 1 min. Stir until well blended. Add marshmallows, toss to coat. Microwave 1.5 minutes or until marshmallows are puffed. Stir until well blended.
2. Add remaining ingredients; mix well.
3. Press cereal mixture firmly into greased foil-lined 9X13 pan. Cool. Cut into 24 bars.
