I’m not a big fan of broccoli, but its one of the few veggies that Seth really likes, so I tend to add it to a lot of our meals. This recipe actually made the broccoli really yummy. The pic probably doesn’t look too appetizing, but it was really good.
I didn’t read the recipe very good so I dumped the whole can of chicken broth in. It was of course then a bit too runny, so I ended up adding more cornstarch to thicken it up. I also forgot to add the crackers at the end, but I did add more cheese and served it on rice.

Chicken & Broccoli Slow Cooker Casserole
1 C Shredded Cheddar Cheese
1 T Cornstarch
1 lb Boneless, Skinless Chicken Breasts, cut into 1-inch pieces
1 pkg (10oz) Frozen Chopped Broccoli
1 Medium-Sized Onion, Chopped
1/2 c Low-Sodium Chicken Broth
1/2 tsp Salt
1/2 tsp Petter
4 T Cheddar Cheese Crackers (optional)
3 C Cooked Rice (optional)
1. Toss together 1/2 c of the cheddar cheese and the cornstarch, set aside.
2. Place chicken, broccoli, onion, broth, 1/4 tsp each of the salt and pepper and the cheddar cornstarch mixtures into slow cooker. Cover and cook on HIGH for 3 hrs or on LOW for 4 hrs.
3. Remove lid and stir remaining 1/2 c cheddar cheese and 1/4 tsp each of salt and pepper into slow cooker. Sprinkle crushed crackers over top and serve immediately with rice.
