Java Salad August 30, 2010

This recipe probably sounds kinda weird. It has nothing to do with coffee despite the “java” in its name. And the ingredients listed below probably sound like they can’t possibly go together. But trust, me…its really delicious!

I made this salad for both of Haddie’s birthday parties. Its pretty easy because you just have to get all the ingredients ready separately and its great for big gatherings. Its also neat because it allows everyone to choose which ingredients they want in their salad so there’s no worrying about what people can’t have or don’t like. And you can even have guests each bring a different ingredient to share.

I got this recipe from my mother-in-law who got it from an office party many years ago.

This is an example of what one of the servings can look like (depending on what you put in!)

Java Salad
-Grapes, washed and de-stemed
-1 Jar Maraschino Cherries
-1 Can Pineapple Chunks
-Lettuce
-Onion, Diced
-Tomatoes, Diced
-Shredded Cheddar Cheese
-Shredded Mozarella Cheese
-1 lb Boneless Skinless Chicken, cut into 1 inch pieces
-1-2 Cans Cream of Chicken Soup
-1 Bag Chinese Noodles
-1 Bag Coconut
-Sliced Almonds
-Rice, Cooked

1. I cooked whole chicken breasts in a crockpot, took it out and cut it up. Then returned it to the juices along with the cream of chicken soup. You may need to add some cornstarch to thicken up the juices to make gravy.
2. Put each ingredient in a different bowl and to set them in this order: Rice, Chicken (w/ Gravy), Cheeses, Lettuce, Tomato, Onion, Grapes, Cherries, Pineapple, Coconut, Almonds, Chinese Noodles. Make your own salads with whatever ingredients you choose!
