Creamy Alfredo Pasta November 3, 2010

I made this last night and it was quite yummy!  I added strips of steak and broccoli to ours. I used a mix of Italian shredded cheese instead of the parmesan (because its what I had and cheaper).  I also used penne pasta.  Oh, and at the end of the sauce cooking, I added salt, pepper, dried parsley (didn’t buy fresh) and some garlic powder.

I’ve made this a few times and each time the sauce is a bit runny.  You might want to keep this in mind and add some corn starch or flour to thicken it up.  Oh, and I doubled the recipe to make sure we had enough for left overs!

I got his recipe from the Southern Living magazine back in February.

Creamy Alfredo Pasta

1/2 (16 oz) pkg pasta

2 cups half and half

1/3 c butter

2 garlic cloves, pressed

1.5 oz (1 cup) fresh parmesan cheese, finely grated

1 Tbsp fresh parsley

1/4 tsp salt


1. Prepare pasta according to package directions.

2. Meanwhile, cook half and half and next 2 ingredients in a large heavy non-aluminum saucepan over medium heat, whisking often, 12 min or until reduced by 1/2 (do not boil).  Remove from heat.

3. Whisk in cheese, next 2 ingredients, and desired amount of pepper until sauce is smooth.  Toss sauce with hot cooked pasta.  Let stand 5 min before serving.
