My Cup Overflows May 28, 2011

I was reminded again today of how blessed we are (no, I don’t consider the truck issues one of those!). I am reminded over and over of how faithful God is to His promises.

“Honor the Lord with your wealth,
with the firstfruits of all your crops;
then your barns will be filled to overflowing,
and your vats will brim over with new wine.” -Proverbs 3:9-10

While I don’t have wine overflowing my vats, well…I don’t really have any vats or even barns, all our needs are constantly taken care of and many of our wants are, too.

Thankfully we both grew up in Christian homes so tithing was second nature when we got married. While the amount has fluctuated over the years, we’ve always strove to give at least 10% and usually more. We’ve never regretted tithing. Actually we’ve always amazed at how God continues to provide. We’ve never not been able to pay our bills even when on paper it looked impossible.

Here are my most recent blessings:

Lawn furniture from a family at church–I’ve wanted furniture to put under the porch outside. But it wasn’t anywhere possible in our budget. So when they asked if we’d want it, we jumped at it. It’s a metal set with four chairs, one lounge chair, a rocking bench, and different size tables. Along with the chair cushions.




My dad came to visit this weekend and whenever he comes I get spoiled. Seth and I have really been blessed with generous and constantly supportive parents. This time my dad fixed the torn out screens on the back side of or porch and bought us two screen doors. He got one up so far and the other will have to wait for his next visit or Seth’s free time.



And he got me enough bags of mulch to finish up my gardens!


I’m so thankful for all my Dad does for us and especially for all my Heavenly Daddy does, too!

Remember giving is the only thing that God has commanded us to test him with:

“Bring the whole tithe into the storehouse, that there may be food in my house. Test me in this,” says the Lord Almighty, “and see if I will not throw open the floodgates of heaven and pour out so much blessing that you will not have room enough for it.” Malachi 3:10

Test God in this, and I promise you won’t be sorry!


The Happiest Day of My Life

This afternoon Seth told me that today would be the happiest day of my life. Oh, really? Happier than my wedding? Happier than graduating college, closing on our first or second home? Happier than the birth of my child? So you’re probably wondering… what’s happening today. This is:


Yes, for those of you who’ve never seen this monstrosity, it’s my husband’s truck. Ugly, yes. Weird, ya betcha. It’s his lovely attempt at building a homemade camper on the back of his truck. He loves designing and building projects. I secretly wonder if he’d enjoy being an engineer. But anyways.

A couple weeks ago he actually admitted that, yes, this project had been a mistake and he regretted it. Amazingly I held my lips shut. The only thing I did say quietly was, (with a small smile) “are you going to listen to your wife next time?” His response: “maybe.”

Well, he admitted the mistake and has been planning on taking it off and leaving it at the new property in Scottsmoor as a type of rustic camping cabin.

So thats what happening today. He’s finally taking the embarrassing contraption off!

But, sadly, I’m not completely in the clear. He recently heard about these large tractor tires for sale at a good discounted price. He’s always wanted big tires for the truck. “The bigger the better,” he says. My response: “I don’t want to have to have a ladder to get in!”

Well, he really wanted these tires and the decision was pretty much sealed when one of his tires blew last weekend. So, he got the tires and then got the rims he needed to mount them.

And so the adventure continues! And the test of marital submission begins anew!

Almond Chicken w/ Rice May 26, 2011

Almond Chicken w/ Rice

It turned out really good. Seth said it was ok and that it tasted just like any other chicken, but then again he’s not a big fan of almonds or green beans. In fact, afterwards he admitted that he purposely dug around the green beans so that he didn’t get any. Way to ruin my attempt to feed him healthy veggies. However, again, I thought it was really good and I’ll probably make it again.

The chicken was okay. I have a feeling I overcooked it, either in the slow cooker or broiling it. It seemed like a bit of work and that it would be just as good to have made BBQ chicken. But it was a change of pace.

Chuck Wagon Pot Roast (Slow Cooker)

It was a nice change of pace from the regular slow cook pot roast. It smelled super yummy while cooking. I ended up using stew beef chunks because ALDI didn’t have the pot roast when I was shopping. As far as veggies, I threw in carrots, peas and Green beans (the last two were frozen). I liked it pretty good, only I wish that Seth had remembered to turn off the crockpot earlier (I set an alarm, but he forgot what it was for! lol). So it was a bit overcooked (noodles and veggies got too soft).

These pancakes were ok, they were nothing super special, but Haddie and Seth ate them up pretty good. They were still hard to flatten onto the griddle. I had to spray my spatula with nonstick spray almost every pancake..
