This is what we had for dinner tonight. It was pretty easy (just a lot of veggie chopping) and has to be pretty healthy. We all liked it, even Haddie. Although at first she refused to eat it but as soon as she tried it, she admitted it was good and ate more.
I used leftover white rice from the java salad I made yesterday (it’s in a post a ways back) and a packet of microwave ready wild rice from Aldi. I also used chicken I had already cooked, shredded and frozen; and homemade chicken broth (leftover juices from cooking the chicken and then frozen in 1 cup portions).
